Maple Brown Sugar Oatmeal Muffins

Ingredients

  • 3.5 cups old-fashioned oats (1.5 cups ground, 2 cups whole)
  • 3 ripe bananas, smashed
  • 2 eggs
  • 3/4 cup whole milk
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/5 tbs. Maple & Brown Sugar Tasty Shakes
  • Extra oats for Topping

Instructions

  1. Preheat oven to 325 degrees, line a muffin pan with muffin tins.
  2. In a large bowl, stir together oats (whole and ground), baking powder, baking soda, salt and Tasty Shakes Oatmeal Mix-Ins.
  3. In another bowl, mix together bananas, eggs and whole milk.
  4. Slowly add wet ingredients into dry ingredients until mixture is completely incorporated, making sure to not over-mix.
  5. Spoon mixture into 12 muffin liners, filling to the top.
  6. Sprinkle dry oats and extra Tasty Shakes over muffins before baking in oven for 30 minutes, or until toothpick comes out of muffin cleanly.
  7. Enjoy and store extra muffins in fridge.
